Their exhibition reveals the tricks of producing this revered delicacy, from catching the finest local salmon to perfecting a time-honoured smoking method that dates back 2,500 years. But it’s the opportunity to watch the staff preparing the fish in the smokehouses, right before your eyes, that makes the visit so worthwhile. You won’t forget the mouth-watering fragrances in a hurry.
